Kerala Style Potato stir Fry with Coconut
Ingredients
Potato 3 medium size Shallots 15 to 20 nos Green chilly 5 Salt as per taste Curry leaves as per taste Coconut scrapped one cup Coconut oil 1 table spoon How to Cook
Chop potatoes and shallots in small pieces. In a cooking vessel add potatoes, shallots, green chilly, salt and water and mix well. Boil all these for 15 minutes and cook potatoes well. When the potatoes cooked well add some Curry leaves, scrapped coconut and coconut oil and close the vessel with a lid and off the flame. After 2 or 3 minutes remove the lid and stir well
